Station Menus

Here is a sampling of some of our many exciting chef station concepts!  Guests can enjoy customized tasting menus freshly prepared to order on site.  Stations are perfect for cocktail style events and can be combined with passed hors d’oeuvres.  Our event consultants will be happy to design a menu incorporating chef stations that will be perfect for your next event.

Mashed Potato Martini Station

Whipped roasted garlic mash or sweet potato mash topped with choice of:
(Select up to three topping options)
12 hour slow roasted beef brisket with rich pan juice and crispy onions
Louisiana style pulled pork with Cajun sauce and crispy onions
Grilled strip loin steak or beef tenderloin medallions with pear and port wine demi
Herbed roast turkey, pan gravy, cranberries & rosemary
Grilled salmon with teriyaki sauce
Lemon/thyme grilled breast of chicken with mango salsa
Wild forest mushrooms with goat cheese mousse
Grilled shrimp with Creole sauce
Rosemary Dijon lamb riblets with peppercorn sauce

Carvery Board:

Served with truffle oil mashed potatoes or on artisanal cocktail rolls

Peppercorn crusted filet of aged beef tenderloin with horseradish aioli, grainy mustard, peppercorn sauce
Boneless leg of New Zealand spring lamb, rosemary demi, mint sauce

Grilled chicken mini panini with pesto aioli and goat cheese
Prosciutto and brie with fig jam mini panini
Margarita mini panini with oven roasted tomato, fresh basil, provolone

Griddle Station

Savoury waffle wedges:  cornmeal, jalapeno or bacon waffles topped with
Pulled pork with chipotle barbecue sauce and crispy onions
Deep fried chicken with southern white gravy
Chili con carne with cheddar
Sweet waffles:  Belgian waffles topped with
Chocolate hazelnut sauce
Caramelized bananas
Strawberry or blueberry compote
Maple syrup, whipped butter, pecan studded bacon

Brunch Bar

Three egg omelet served with hash brown potatoes with choice of toppings:
Ham, sausage, bacon, grilled peppers, tomatoes, grilled onions, spinach, mushrooms, cheddar or Swiss cheese
Breakfast bloody Mary’s: (served in cosmo glass over hash brown potatoes)
Scrambled eggs, bacon curls, chipotle ketchup
Mexican scrambled eggs with peppers and onions, grilled chorizo sausage, salsa, avocado

Pasta Station

Nova Scotia stuffed lobster ravioli with tarragon white wine sauce
Sun dried tomato and asiago stuffed ravioli with San Marzano tomato and basil sauce
House made potato and ricotta gnocchi with vodka sauce

Risotto Bowl Station

Chef prepared Nova Scotia lobster risotto with chives and smoked mozzarella
Chicken risotto with asparagus spears and mascarpone
Saffron risotto with chorizo and
Wild mushroom risotto with truffle drizzle and parmesan
Saffron risotto with chorizo and cheddar

Satay Station

Select up to three
Penang curry chicken satay with spicy peanut sauce or cashew dip
Angus tenderloin satay with Hoisin garlic sauce
Atlantic salmon satay with teriyaki glaze and mango salsa
Sririacha grilled shrimp with cucumber raita
Afghan lamb kebab with tomato/onion salsa
Portobello and Japanese eggplant skewer with green curry dipping sauce

Asian Noodle Station

Choice of Asian style udon noodle or rice noodle topped with
Chicken and vegetable flash fry
Tofu and baby bok choy flash fry
Shrimp and pad Thai vegetable flash fry
Garnished with chopped peanuts, cilantro, bean sprouts, scallions

Indian Station

Jasmine rice with coriander topped with choice of:
Mumbai butter chicken
Tandoori beef
Chickpea and lentil curry
Curried vegetables
Served with garlic naan bread wedge

Caribbean Station

Stew peas and rice topped with:
Curry chicken with mango salsa
Jerk pork
Vegetable stew with okra
